Who doesn’t love cheese…and cute little goats? In June of last year I had the opportunity to visit the Noble Springs Dairy farm and meet owners Justyne and Dustin Noble. Located minutes from downtown Franklin their farm produces and ships a variety of farmstead goat cheeses like Chevre, Harpeth Fleur, Southall Gouda and Feta. They learned their process from a Dutch cheese maker who gave away the secrets of making delicious goat cheese. Their southern creamery also offers goat milk fudge, goat milk soaps and bottled milk. They take pride in raising their goats’ with a forage-based diet and they slow pasteurize their milk at 145 degrees in small vats so it is never mechanically homogenized. And if you have kids….they offer farm tours! The kiddos can pet the animals, learn about the goats, farm life, learn how cheese is made and the tour offers many hands on opportunities.

The Noble Springs Dairy farm came about as a bit of a love story. Dustin grew up in Williamson County, his parents owned and managed Traveler’s Rest Hotel and Noble’s Restaurant in Brentwood for many years. When he was little his family discovered his brother, Christian was allergic to dairy. Upon trying a friends suggestion to substitute goats milk, they  borrowed two goats to maintain a steady milk supply for the family. Justyne grew up in a small town in Kansas and in 1996 her mom got her two Alpine goats for a 4-H project. This set the stage for both Justyne and Dustin to work with goats and compete at local and national shows. They met in 2003 at the American Dairy Goat Association national show, exchanged emails and stayed in touch. In 2006 Justyne moved to Tennessee to go to college, fast forward to 2009, Justyne and Dustin were in love and began building their Noble Springs Dairy and living their dream of owning and operating a farm.

The day I showed up at Noble Springs Dairy there was a torrential downpour on the drive out, I was seriously thinking the shoot would never happen. As I arrived the skies cleared the sun peaked out and made for some great photos. It was a great tour, lots of laughs with the little goats and Justyne and Dustin were perfect host! Noble Springs milk, cheese and soap can be found at numerous retail locations, farmers markets and restaurants. Some of their items can be purchase online here!
